Hello! Welcome to another Filipinos favorite ulam….. ang ADOBO.
Whatever kind of Adobo, for sure there will be nothing left even the left over rice (kaning lamig)
I usually called it “pang zombie apocalypse na ulam”, because it can last longer than any other menu, it will not be spoiled even without putting it inside the fridge, and as the days go by, it become more flavorful and delicious.
I inherited this version from my grandmother.
Ingredients:
2 kgs chicken
1/2 cup vinegar
1/2 cup soy sauce
1/4 tbsp White pepper/black pepper
2 pcs Bay leaves
1 onion (chopped)
6 pcs gloves garlic (minced)
2 Tbsp oyster sauce (optional)
Cooking oil
Procedure:
1. In a pan or casserole, combined chicken, vinegar, soy sauce, white pepper, bay leaves, chopped onion and minced garlic.
2. Set the stove in medium and place over the casserole, cover with lid and let all the ingredients be cooked, especially the vinegar.
3. After 30mins open the lid and check if the vinegar is cooked, then add the oyster sauce for more flavorful sauce.
4. Let it boil for 5mins, turn off the stove and take out all the meat from the sauce.
5. Set the stove in medium, place the pan and add cooking oil to fry all the chicken. This method is to lock the flavor of sauce in our meat.
6. Meanwhile, while waiting for the chicken to be fried, prepared another set of chopped onion and minced garlic.
7. After frying, placed another pan on the stove and start our sauté, once the garlic and onion are cooked, add the sauce and let it boil, at this time we can check the taste of our sauce, if it’s too sour we can add some water and adjust according to your taste.
8. Once boiling , add all the meat or chicken that we fried. Just simmer for about 10mins and we’re done.
Combined with a lot of steamed rice or fried rice.
It’s best to serve on the next day.
