Potato chicken roll ups, high protein dinner recipe

Ingredients ( servings 8 roll ups )

Potatoes ( medium ) – 6
Chicken ( minced ) – 1 lb
Mushrooms ( minced ) – ½ cup
Feta cheese – ½ cup
Salt & pepper – to taste
Oregano ( dry ) – 1 tsp
Dill ( chopped ) – ¼ cup
Butter ( melted ) – ¼ stick
Oil spray – for air frying

Sauce: mix sour cream with chopped dill.

Additional accessories: KitchenAid vegetable sheet cutter.

Preparation steps:

Using a KitchenAid vegetable sheet cutter adapter, slice potatoes into the thin sheets.
Layer one sheet of potatoes on the board and brush it with the melted butter. If some of the potato sheets end-up short, you can combine several of them in the single row. Now roll the sheet into the tube and then using your finger help to extend the tube from inside to the telescope shape roll.
Make stuffing by combining chicken, feta cheese, mushrooms, salt, pepper, oregano and dill. Stuff each roll with the chicken stuffing, you can fit 2-3 tablespoons in each roll.
Spray rolls with the oil spray and air fry rolls on chicken setting ( 380°F for 25 min ), flip half way.
Serve rolls warm with sour cream and dill.

This recipe is a great source of lean protein if you are on a high protein diet.
