Protein Packed Rice Salad Recipe


Though there is no need to worry about protein intake on a plant based diet, many people accustomed to eating a lot of meat may still be concerned when reducing their intake. With tofu, rice, almonds and greens all being high protein foods, this meal is jam packed with goodness and super filling. Enjoy!

“Glory Bowl” recipe originally from chef Shelley Adams in her cookbook Whitewater Cooks.

Ingredients:
The Bowl
brown rice
beets, grated
carrots, grated
slivered almonds, toasted
greens of your choice, roughly chopped
tofu, cubed and fried

The Dressing
1/2 cup nutritional yeast flakes
1/3 cup soy sauce
1/3 cup apple cider vinegar
1/3 cup water
2 tbsp tahini paste
3+ cloves garlic, crushed
1 1/2 cups vegetable oil
*dressing makes tons of extra. It keeps well in the fridge and is awesome on many other salads as well.
