Pesto Chicken
+Ingredients:
Pesto sauce
Cherry tomatoes
Garlic cloves
Heavy cream
Chicken breast
Olive oil
Salt
Pepper
Chili powder
+Instructions:
-Marinate the chicken breast by adding a splash of olive oil, salt, pepper, and a pinch of chili powder. Massage it well and set aside.
-Slice around 15 cherry tomatoes and 4 garlic cloves.
-Heat a pan on the stove and add one tablespoon of oil. Once hot, add the marinated chicken breast and cook for around 10 minutes. Flip the chicken breast after 5 minutes, and cook until it’s golden brown on both sides.
-Remove the cooked chicken breast from the pan and add another tablespoon of oil to the same pan.
-Add chopped garlic and saute for 40 seconds or until golden brown.
-Add the sliced cherry tomatoes and cook until the tomato skin starts to become loose.
-Add two tablespoons of pesto sauce and half a cup of heavy cream. Mix them well and allow the sauce to come up to a simmer.
-Add the cooked chicken breast into the sauce and let it cook for a few minutes until heated enough.
-Taste the sauce and add salt or pepper if needed.
-Serve with salad and fresh baguette or pasta.
Spicy Garlic Chicken
+Ingredients:
Gochujang chili paste
Soy sauce (light or dark)
Garlic cloves
Red onion
Honey
Spring onions
Chicken breast
Olive oil
Salt
Pepper
Onion flake
Oregano
Oyster sauce (optional)
+Instructions:
-Marinate the chicken breast by adding salt, pepper, onion flake, oregano, and olive oil. Massage it well and let it rest.
-Cut 2 small red onions, 4 big garlic cloves, and 2 stalks of spring onions.
-Heat a pan on the stove and add a tablespoon of oil. Once hot, add the marinated chicken breast and cook for around 10 minutes. Flip the chicken breast after 5 minutes, and cook until it’s golden brown on both sides.
-Remove the cooked chicken breast from the pan and set aside.
-Add another tablespoon of oil to the same pan and saute the chopped red onions until golden brown.
-Add garlic and saute for another minute.
-Add two tablespoons of Gochujang chili paste and mix well.
-Add the cooked chicken breast and let it simmer for a few minutes.
-Add a tablespoon of oyster sauce (optional) and 1.5 tablespoons of soy sauce. Mix well and let it cook for 2 minutes.
-Add the finely chopped spring onions and mix them in.
-Turn off the heat and drizzle a bit of honey on top.
-Serve hot. If you want a vegan option, replace the chicken with tofu and omit the oyster sauce.
