Today I go vegan and whip up a salad using my favourite grain, quinoa, plus i use some of my other favourites, sun dried tomatoes and spinach, coupled with a lemon dressing and boof! I love a healthy salad! Plus i show you how to cook quinoa #quinoa
Salad
1 cup quinoa1/3 to 1/2 cup sun-dried tomatoes, chopped
2 cups roughly chopped fresh spinach or rocket/arugula
1/3 cup sliced almonds or pine nuts
Salt, to taste
Lemon dressing
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, pressed or minced
1 teaspoon Dijon mustard
Red pepper or Chili flakes
Freshly ground black pepper, to taste
