Great Grandma Sophia’s Butter Cake

This patriotic and easy no bake cheesecake layered trifle with fresh macerated fruit, is all about red, white, and blue! This is SO EASY and FAST and DELICIOUS and of course, PATRIOTIC!

Red, White, and Blue Layered Dessert

Ingredients:
For no bake cheesecake layer:
4 oz. softened cream cheese
1 cup whipped cream (whipped until stiff to make 1 cup)
1/3 cup sugar
1 tsp. Vanilla extract
2 tsp. Lemon juice

2 cups of cake, cut into chunks. I used my Sri Lankan butter cake: https://ritzymom.com/2018/01/08/great-grandma-sophias-butter-cake/

Pint of blueberries, macerated: put blueberries with 1 tab sugar & 2 tsp. Lemon juice and let sit 5 minutes.

Pint of cut of strawberries, macerated: put sliced strawberries with 1 tab sugar & 2 tsp. Lemon juice. Let sit 5 minutes.

In 4 glasses (or trifle dishes), layer red strawberries/ a few chunks of cake, then white layer of no bake cheesecake / then top with blue layer of blueberries.

Refrigerate for about 1 hour before serving to allow no bake cheesecake to set.
