Recipe :
Butter Chicken
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 4

Ingredients:
1 kg Chicken, curry cut
1tsp Salt
Marinade:
2tbsp Mustard Oil
1tbsp Kashmiri Red Chili Powder
2tbsp Ginger Garlic Paste
1tbsp Lemon Juice
1 tsp Black Pepper Powder
1tsp Garam Masala Powder
Salt to taste
1tsp fine chopped Green Chilies
For the curry:
1 cup Water
500g chopped Tomatoes
5 cloves Garlic
1” Ginger
1 large Onion, chopped
Cashew Nuts
For Finishing:
1tbsp Oil
2tbsp butter
1/4 tsp Caraway Seeds
1tbsp Kashmiri Red Chili Powder
1 cup Tomato Puree
1tsp Garam Masala Powder
1tsp Sugar
Salt to taste
1/2 tsp Black Pepper Powder
1/2 cup Cream
1tbsp Kasuri Methi

Method:
Marinate the chicken with salt and set aside for 10 minutes.
Squeeze the extra moisture out of the chicken.
Mix together all the ingredients listed for the marinade.
Marinate the chicken in the mixture for 2 hours.
Grill the chicken pieces or bake in a hot oven at 200C or pan grill the chicken.
Take all ingredients listed under curry and cook for 30 minutes till well cooked.
Blend in a blender and pass through. Sieve to get a smooth gravy.
Heat together the oil and butter in a pan.
Add the caraway seeds and allow to splutter.
Add the Kashmiri red chili powder and cook for 30 seconds. Add in the prepared sauce, tomato puree, salt to taste a bit of sugar.
Cook the sauce till thick and creamy.
Add in the chicken pieces, cream and pepper powder, garam masala powder.
Cook 4-5 minutes. Add crushed Kasuri Methi.
Remove from heat, serve garnished with cream and Kasuri Methi.
