Ingredients:

2 chicken leg pieces
2 chicken chest pieces
5 tablespoons yogurt
1 tablespoon salt
Juice of 8 lemons
1.5 tablespoons ginger-garlic paste
1 tablespoon green chili paste
1 tablespoon chili flakes
1/2 tablespoon ajowan caraway
1 tablespoon allspice powder
1/2 tablespoon papaya powder
1/2 tablespoon black pepper
Approximately 3/4 tablespoon red chili powder
1 tablespoon white cumin seeds
7-8 tablespoons cooking oil
1 tablespoon Ajinomoto (Chinese flavored salt)
A pinch of yellow food coloring
A pinch of red food coloring
Coal for a smoky taste (optional)

Method:

In a large mixing bowl, combine yogurt, salt, lemon juice, ginger-garlic paste, green chili paste, chili flakes, ajowan caraway, allspice powder, papaya powder, black pepper, red chili powder, and white cumin seeds. Mix well to form a smooth marinade.
Add the chicken leg and chest pieces to the marinade, ensuring they are well coated. Allow the chicken to marinate for at least 2 hours or preferably overnight in the refrigerator.
Heat the tawa (flat griddle) on medium heat and add cooking oil.
Place the marinated chicken pieces on the hot tawa and cook for 8-10 minutes on each side, or until the chicken is cooked through and slightly charred.
Optional step for a smoky flavor: Light a piece of coal until it turns red-hot. Place the hot coal on a small piece of aluminum foil placed in the center of the chicken. Drizzle a little oil over the coal and quickly cover the tawa with a lid. Allow it to smoke for a few minutes to infuse the chicken with a smoky flavor.
Remove the chicken tikka from the tawa and let it rest for a few minutes.
Serve the tawa chicken tikka hot, garnished with fresh coriander leaves and accompanied by mint chutney, sliced onions, and lemon wedges.
