This salad is so elegant. Super combination of goat cheese and roasted beetroot with baby spinach and arugula.
Ingredients for 4 servings:
2 beetroots
100 g baby spinach
100 g arugula
100 g soft goat cheese
80 g walnuts
2 sprigs of thyme
2 tsp olive oil
Salt
For the dressing:
4 tbsp Extra virgin olive oil
2 tbsp white balsamic vinegar
1 tsp garlic powder
Zest of 1 orange
2 tbsp fresh orange juice
1 tsp Dijon mustard
