Roasted Half Chicken with Southern Hoppin’ John

Total time: 1 hour
Serves: 4

Ingredients:
Roasted half chicken, Olive oil, Bacon, Scallions, Celery, Vinegar, Butter, Chicken Stock, Canned chickpeas, Garlic, Red pepper flakes, Rice, Bay leaf, Onion, Collards, Kale, Canned gigande, Parsley

Preparation:
Preheat oven to 375
Place chicken in ovenproof dish
Cook for 15-20 minutes
Oil sauté pan and add chopped bacon. Cook until crispy
Remove bacon and place on paper towel
Add celery and onions to sauté pan
Once tender add diced garlic
Chop collards
Combine collards and kale in to sauté pan, season with salt and pepper
Add bacon and all beans
Add chicken stock
Add bay leaf and red pepper flakes
Remove chicken from oven

To serve:
Put one serving of rice on serving dish. Top rice with hoppin’ john. Place chicken on top, garnish with parsley
