Roasted Honey Orange Chicken & Potatoes

Ingredients

For the chicken
• 1 chicken, cut into 8 portions
• Salt
For the potatoes
• 2 pounds, small sized
For the marinade
• 4 clove(s) of garlic
• Lemon juice, of 1 lemons
• Orange juice, of 6 oranges
• ¼ cup g olive oil
• 1.5 cups water
• 3 Tbsp honey
• 3 Tbsp mustard, mild
• 1 teaspoon(s) oregano, dry
• Salt
• Black pepper
To serve
• Strained yogurt or tzatziki
• Rustic bread

Method

• Preheat oven to 400° F (200° C).
For the marinade
• Mix the orange juice, lemon juice garlic, extra virgin olive oil, honey, mustard, water salt, pepper and a generous amount of oregano in a bowl, until all of the ingredients are combined.
For the potatoes
• Peel the potatoes and chop them in to wedges.
For the chicken
1. Place the chicken in a large bowl, add some salt and let it stand for at least 2 hours.
2. Place the potatoes in the baking dish and pour 1/3 of the marinade over them. Make sure to cover all potatoes with marinade
3. In the bowl with the chicken pour 1/3 of the marinade over it. Massage it on to chicken until it is completely coated. Add the chicken in the baking dish between and over the potatoes.
4. Drizzle any remaining marinade over chicken and potatoes and cover with aluminum foil.
5. Roast for 45 minutes, remove aluminum foil and roast for another 45to 60 minutes, basting the chicken with the marinade and juices as often as possible.
6. When ready, serve orange chicken and potatoes with Greek tzatziki sauce and rustic bread!
