Rose Falooda Recipe by Food Prescription
Step 1: Rabdi
• Set a pan on the heat and add 500 ml milk.
• Cook for 30 min that is until the milk is reduced to half
• Add 1 tbsp sugar and 1 tbsp milk powder and Cook for another 15 min.
• Now, add 2 tbsp condensed milk (or you can add more to increase the sweetness) and cook for further 10 min
• Cool down the rabdi and refrigerate for 2 hours.
Step 2: Rose Milk
• Boil 500 ml Milk
• Add 1 tbsp sugar
• After the milk has boiled, add thin cornflour slurry (1 tsp cornflour + 4 tbsp water)
• Add slurry and keep mixing for 5 min on low flame.
• Then cool down the milk and refrigerate for 2 hours.
• Chilled Milk is ready
• To that add, 1/4th cup of rose syrup ( I have used Rooh Afza)
• Add some more ice, stir it nicely and the Rose Milk will be ready.
Step 3: Falooda Sev
• Take 1/4th cup cornflour and add 1&1/2 cup water to it.
• Also add 1 tsp sugar
• Whisk it nicely to make it lump-free.
• Once the cornflour has completely mixed, transfer in another vessel and switch on the flame.
• And continuously keep stirring until it becomes transparent, thick, and glossy.
• Put the cornflour mixture in sec machine, press the hot cornflour mixture through the machine into ice-chilled water such that the strands of noodles are immersed completely in the ice water.
• Remove the excess water and your falooda sev will be ready.
Step 4: Sabja seeds
• Take the sabja seeds (1 tbsp) in a bowl and add enough water (1/4th cup) to it.
• Let it sit for 5 mins or more.
• And the fluffy sabja seeds are ready.
Step 5: Assembly of Falooda
• Take a tall glass, start with adding 4 tbsp sabja seeds.
• Add some Falooda sev (2 tbsp) and drizzle some rose syrup over it.
• Now add Rabdi (1/4th cup)
• Pour the chilled rose milk till about half the glass.
• Add a scoop of vanilla ice cream or Kulfi and sprinkle some tutti frutti.
• Finally garnish it with a cherry on top.
