Thank you for joining us at the 3rd Annual Trip Haggard Steak Cook-off in Tulsa, OK. We had an amazing time cooking SCA Steak with everyone and we hope that you enjoy this video. We have linked all the cool stuff and followed it up we our recipe and timeline for our competition steak.
1. Trim steaks to your liking.
2. Salt brine for 20-30 minutes depending on thickness (Rinse extremely well).
3. Marinate in Kosmo’s Q beer MOP 1/2 bottle & 1 12oz beer (for 1 hour).
4. Apply rub and let rest for at least 30 mins.
5. Heat grill grates to 600°.
6. Rub steak with lite coat Cow Cover, medium coat Dirty Bird HOT, and light coat Texas Beef.
7. Cook steaks for 2:30 per side making sure to rotate at the halfway point for perfect grill marks.
8. I pull my steak at 127° and let rest for 10 mins.
9. Hit with a lite coat of Himalayan salt.
10. Box up and turn in.
