Silken tofu chocolate mousse | Quick and easy vegan dessert recipe


You can make this delicious and silky vegan chocolate mousse with just 4 ingredients although it’s well worth the effort to serve it with some chopped hazelnuts and white chocolate shavings. Guaranteed to impress, no one will believe how easy it is to make!

Serves 5 – 6

Ingredients:

1 pack silken tofu (about 300g)
200g dark chocolate (I’ve used Lindt Excellence dark 70% cocoa)
80ml (1/3 cup) unsweetened almond milk (or soy milk)
60ml (1/4 cup) agave nectar
1 small vegan white chocolate bar, to grate (optional)
roasted chopped hazelnuts, to sprinkle (optional)

Method:

1. To melt the chocolate on the stove: break the chocolate into pieces and put it into a small saucepan. In another slightly larger pan, where the smaller one can fit well, pour some water (about a third full) and bring to a gentle simmer over a medium heat. Set the smaller pan with the chocolate into the larger one (if there is too much water in the pan just take out a little to prevent that any water comes in contact with the chocolate). Over a very low heat, let the chocolate melt, stirring once in a while until silky and smooth. Carefully remove from the heat.

2. Put the tofu (no need to drain), almond milk and agave nectar into a blender and blitz until smooth.

3. Pour the tofu mixture into a medium mixing bowl and stir in the melted chocolate. Use a whisk to combine everything well until you have a lump-free mixture.

4. Spoon the mousse into small glass bowls or ramekins and set in the fridge for at least 4 hours.

5. Serve each one with chopped hazelnuts and/or grated white chocolate (or use a vegetable peeler to make chocolate shavings).
