Key Lime Pie
Ingredients
¾ cup sugar
1 tablespoon lime zest
½ cup key lime juice
4 eggs + 2 egg yolks
Pinch of salt
¼ cup butter, cubed
Method
1. Over a double broiler, whisk all the ingredients together. Continue to whisk until your thermometer reaches 160 degrees.
2. At 160 degrees, remove from heat and begin whisking in butter in pieces.
3. Pour into pre-made pie shell, then refrigerate for a minimum of 4 hours.
4. Pie is ready to eat!
5. The pie can be stored in the refrigerator for a maximum of 4 days.
