Salmon Salad Recipe
Ingredients (serves 1):
Spinach/rocket mix
1 small carrot
½ punnet cherry tomatoes
1 small Lebanese cucumber
1 small can corn
1 can John West smoked salmon
20g slivered almonds
Balsamic vinegar
Olive oil
Salt & pepper
Method:
Lightly toast slivered almonds
Julienne or thinly slice the carrot
Cut tomatoes in half
Slice cucumber
Place ingredients in a bowl, add corn and salmon. Dress with vinegar and oil, toss & divide on 2 plates, sprinkle with toasted almonds just before serving.
