SLOW COOKER FRIED CHICKEN A HEALTHIER VERSION

Enjoy a healthier version of this delicious southern dish with this slow cooker fried chicken recipe. Buttermilk marinated chicken legs dredged in seasoned flour, egg and seasoned Panko breadcrumbs then slow cooked in the crock pot until moist and tender with a beautiful crispy crust.

Shopping List:
4-5 large chicken legs
1-2 cups buttermilk
2-3 eggs
1 cup all purpose flour
1 cup Panko bread crumbs
1 tbs kosher salt for chicken
1 tsp. course black pepper for the chicken
1 tbs. kosher salt for the bread crumbs.
1 tsp garlic powder
1 tsp onion powder
1 tbs paprika
Olive oil non stick spray

Directions:
Soak the chicken in the buttermilk 2 to 24 hours. Place the chicken in a container with a lid and place in the fridge. If you don’t have buttermilk you can make your own by adding an acid like lemon juice or vinegar to whole milk. For every cup of milk use 1 tbs. lemon juice or vinegar. Soaking in buttermilk breaks down the protein and makes the chicken very tender and moist.
Lightly beat the eggs in one bowl.
Add the Panko bread crumbs to another bowl. Add 1 tbs salt.
In another bowl season the flour with the garlic powder, onion powder and paprika.
Remove the chicken from the buttermilk and pat dry with paper towels.
Spray the chicken with olive or vegetable oil.
Season the chicken with kosher salt and course black pepper.
Dredge each piece of chicken in the seasoned flour then the egg then the Panko bread crumbs.
Lightly spray the bottom of the slow cooker with non stick spray.
Arrange the chicken pieces in one layer across the bottom of the slow cooker.
SLOW COOKER TIP: USE A SLOW COOKER BOTTOM RACK IF YOU HAVE ONE. THIS WILL ASSURE THE BOTTOM OF THE CHICKEN DOESN’T SIT IN THE COOKING GREASES AND BECOME SOGGY.
Place a towel over the slow cooker then place on the lid of the slow cooker and cook on low for 4- 5 hours or high for 2-3 hours. The towel will keep the condensation from dripping down from the lid onto the chicken while cooking making it soggy.
SLOW COOKER TIP: RESIST TAKING THE LID OFF DURING THE COOK. EACH TIME YOU DO IT LOSES SIGNIFICANT HEAT EXTENDING THE COOKING TIME.
During the last 15 minutes of the cook remove the lid; this willhelp to make the chicken even crispier.
Verify the chicken has reached 165 degrees with an insta-read thermometer, making sure it’s placed in the meatiest part of the chicken not touching any bone.
Serve immediately with your favorite southern sides.
