This Southwestern potato salad is a great summer side dish!
Southwestern Potato Salad

1 1/2 to 2 pounds new potatoes
3/4 cup mayonnaise
1 Tablespoon Dijon mustard
1-3 Tablespoon Chipotle salsa
1 Tablespoon lime juice
1/2 cup tomatoes, chopped
1/4 cup cilantro
3 green onions, chopped
1/2 red onion, chopped
4 cloves garlic, minced
1/2 to 1 teaspoon cayenne pepper
Salt and pepper
Add whole new potatoes to a pot of boiling water. Boil until they are fork tender.
Mix together mayo, lime juice, Dijon mustard, chipotle salsa, cayenne pepper, salt and pepper.
Drain and slice new potatoes. Place in a large bowl. Add chopped ingredients. Gently mix in mayonnaise mixture.
