Kaldereta or caldereta is a goat meat stew from the Philippines. Variations of the dish use beef, chicken or pork.
Commonly the meat is stewed with vegetables and a liver paste. Vegetables may include tomatoes, potatoes, olives, bell peppers and hot peppers; kaldereta sometimes includes tomato sauce and coconut milk.

Ingredients:
1 Whole Chicken (cut into serving parts)
½ cup Pineapple Juice
¼ cup Soy Sauce
2-3 pcs. Laurel (bayleaf)
Salt and Pepper to taste
2 tbsp. Olive Oil
70 grams Chorizo Bilbao, sliced
2 medium Tomatoes (chopped)
4 medium Potatoes (peeled and quartered)
2 medium Carrots (peeled and cut diagonally in a bias into ½-inch thick)
1 small Green Bell Pepper (cored, seeded and cut into 2-inch cubes)
1 small Red Bell Pepper (cored, seeded and cut into 2-inch cubes)
2 small Red Onion (peeled and julienne)
8 cloves Garlic (peeled and minced)
2 to 3 Chili Peppers (ends trimmed and minced)
2 cups Tomato Sauce
1 tbsp. Tomato Paste
400 ml Coconut Cream
1 cup Water
1 small can Liver Spread
¼ cup Green Peas
½ cup Cheese (or any quickmelt variety) shredded
