• 6 Chicken Thighs – No Skin, No Bone
• 1 Onions Chopped
• 3 Garlic Cloves Smashed
• 2 Tomatoes Chopped-remove skin
• 3 tbsps. Parsley Chopped
• 1 Cup of Rice
• 2 Cups of Water
• Juice of ½ Lemons
• Salt/Pepper to taste
• Green Onions to Garnish
CHICKEN CASSEROLE (FRICASSE DE FRANGO):
• 1 Cup Cooked Corn
• 1 Can Media Crema (Nestle)
• ¾ Container Cream Cheese
• 2 Chicken Breast Cooked And Shredded
• 1 Onion Chopped
• 3 Garlic Cloves Chopped
• 2 Tomatoes Chopped –remove skin
• 1 Home Style Chicken Flavor (Knorr)
• 5 Tbsps. Panko Bread Crumbs
• 2 tbsps. Parmesan Cheese
• Salt/Pepper to taste
