To make Strawberry Phirni, we need:
Ingredients:
3 cups of full cream milk
1 cup of cold full cream milk
1/4th cup basmati rice soaked in water for 1/2 an hour and strained
15 strawberries
1/2 cup sugar
1/4th Tsp rose essence
Method:
Puree the strawberries in a blender jar and set aside. In a separate blender jar, add soaked and strained basmati rice. Blend it for 10-12 seconds into a powder. Add the rice powder into 1 cup of cold milk and mix well. Bring remaining 3 cups of milk to boil in a heavy bottomed pan. Add the rice milk mixture, little at a time. Keep stirring the milk continuously. In 15 minutes, the mixture will somewhat reduce. Then add sugar and stir and cook the phirni for another 10 minutes. Now add strawberry puree and rose essence. Mix well and cook for another 5 minutes. Phirni is done. Transfer it into dessert bowls. Garnish with pistachios and strawberry slices. Refrigerate for atleast 8 hours before serving.
