INGREDIENTS:

MUSHROOM SAUCE
2 tbsp butter
1 cup mushrooms, sliced
2 tbsp all purpose flour
1 cup chicken stock
Salt, pepper and dried parsley to taste

CHICKEN MARINATION
2 chicken breast
1 tbsp paprika
1 tsp garlic powder
Salt to taste
1 tsp onion powder
1 tsp thyme
2 tbsp oil
1 tbsp lemon juice

STUFFING
4 tbsp cream cheese
1 tbsp butter
1 tbsp mayonnaise
¼ cup chopped bell peppers
¼ cup chopped spinach
1 tbsp shredded cheese


DIRECTIONS:

MUSHROOM SAUCE
1. Combine butter and mushrooms in a pot, cook until golden brown
2. Add flour and stir constantly until light brown
3. Add chicken stock
4. Season with salt, pepper and dried parsley to taste, cook until thickened

CHICKEN MARINATION
1. Combine all ingredients in a bowl, mix well

STUFFING
1. Combine all ingredients in a bowl, mix well

ASSEMBLY
1. Cut chicken breasts from their sides to create a pocket
2. Rub marinade on chicken
3. Add stuffing inside the pocket, you can use wooden sticks to close it up before baking
4. Bake at 425°F / 225°C for 35-40 mins
5. Top with mushroom sauce, and enjoy!
