SUPER EASY CHICKEN RECIPE | COOK WITH ME! | HEALTHY RECIPES

In today’s video I’m sharing with you a family favorite dinner recipe that I’ve done many times! It’s so easy, so affordable, and most important SOOOO DELICIOUS! It’s packed full of flavor without a whole lot of calories. I’ve paired it with some healthier sides, like sautéed spinach and brown rice. It’s a perfect way to add elegance to your at-home dinner dates or outdoor picnics. As a homemaker, I love creating the paradise we all dream about through food! **Basil Pesto Chicken Roll-ups RECIPE**

4-6 Chicken Breast
1/2 cup Basil Pesto
1 Cup shredded Mozzarella cheese (or any cheese you like)
Salt/Pepper
Toothpicks

Preheat Oven to 350 degrees. Preheat skillet med-high heat with oil. On a large cutting board, lay each chicken breast down. Cover with plastic wrap. Using a mallet, flatten each chicken breast. Season each side with salt and a pepper. Add about 1-2 tbsp of basil pesto, and a sprinkle of mozzarella cheese. Using your hands, roll up the chicken with ingredients inside (like a burrito). Secure with 3-4 toothpicks. Set aside. Repeat for all chicken.

In a preheated skillet, add chicken. Brown both sides (about 3-4 min each). Lay in deep oven-safe pan. Cook chicken in oven for approximately 20-25min. (I like 23min using my oven) until inside temperature reaches 165 degrees.

Remove toothpicks once cooled and ENJOY!!
