All you need is a food steamer, rice cooker, or wok with a steaming rack. Steamed food does not have to be bland or unpalatable. If done correctly, steamed food can be very tasty too. If you’re using shrimp, clams, or calamari, you don’t have to marinate them ahead of time, but for meats, like chicken and pork, we recommend marinating them first to make them more flavourful. Glass noodles, also known as bean vermicelli, fen si, cellophane noodles, or bean thread noodles, are commonly made from mung bean, but sweet potato or tapioca starch are also used in some varieties. You can easily get glass noodles from most supermarkets, particularly Asian shops. Glass noodles are sold dry and are usually white or light brown/greyish in colour, but they become transparent and glass-like when cooked. Glass noodles have a neutral flavour and absorb liquids well, making them suitable for a wide range of dishes. Simply soak glass noodles in tap water for 15 to 20 minutes until softened before using them. Just one last thing to note, make sure the water is boiling vigorously before putting your dish to steam. Steamed Glass Noodle Chicken 粉丝蒸鸡
Ingredients:
Serves 4 pax

320g boneless chicken thigh with skin on (cut into bite-sized pieces)
2 Chinese dried mushrooms (rehydrated and cut into thin strips)
5g thinly sliced young ginger
1 stalk of spring onion (thinly slice the white part and use it to marinate the chicken. Chop the green part and sprinkle them on top of the dish when it’s done.)
37g glass noodles (or a small bunch. The weight here was taken before rehydration)
1 tablespoon oyster sauce
1 tablespoon light soy sauce
3 cloves chopped garlic
1 tablespoon Chinese cooking wine (Shaoxing Huatiao wine) – optional
0.5 teaspoon sugar
0.5 teaspoon salt
3 tablespoons cornflour
3 tablespoons water
1 tablespoon sesame oil
