Tandoori chicken is usually prepared by roasting marinated chicken in a tandoor, a cylindrical metal or clay oven. The dish originated from the Indian subcontinent and is popular in many other parts of the world. A dish with an unusual smokey flavour turns appetising. Though almost all vegetables can be made tandoori, what holds the crown is definitely Tandoori Chicken. It can be done in an OTG oven, the same flavour and texture can be attained in a pan as well.
By taking into account the minor details mentioned in this recipe video, you too can excel in making this intense and yummy dish.
Ingredients for Marination:
Big Chicken pieces-1/2 kg
Turmeric powder – 1 tsp
Corriander powder-1 tbsp
Pepper powder-1 tbsp
Ajwain/carom seeds-1 tsp (optional)
Dry mango powder-1 tsp(optional)
Garam masala powder-1 tsp
Tandoori masala powder-1 tbsp(optional)
Kashmiri chilli powder -1 tbsp
Salt(according to your taste)- 1-11/2 tbsp
Kasuri methi-1 tsp(optional)
Ginger- 1 piece
Garlic-4 pods
Feenel seeds-3 tbsp (paste/crushed)
(For spicy chicken) Red chilly powder- 1 tbsp
Dahi/Curd – 3 tbsp
To Roast: Butter – 2-3 tbsp (to roast the chicken)
For smoke:
Charcoal/burned coconut shell-1 piece
Garnish – Coriander leaves, onions slices, lemons halves
For Marination:
Method 1 – Make some deep cuts on the chicken pieces. Add chicken and all the ingredients to a bowl and mix well.
(or)
Method 2- Make some deep cuts on the chicken pieces. Add all the ingredients mentioned above to a bowl and make a paste. Now add the chicken pieces and mix well.
Keep aside the marinated chicken for 30 minutes to 2 hours.
For Roasting:
1.In a pan add 2-3 tbsp of butter, place the chicken pieces in the pan. Cook in medium-high flame for 1 minute and turn to the other side and cook for 1 minute.
2.Now turn to the other side,close the pan with a lid and cook for 5 minutes in medium-low flame.Again, do the same for the other side.
3.Cook each sides properly until you get nice golden brown colour. Your total cooking time will be for 10-15 minutes.
4.Heat the charcoal/burned coconut shelll until its red in colour.
5.In the bowl where the tandoori chicken is placed, keep a small steel bowl or plate and place the coal in it and add some ghee and cover the lid.
6.Garnish it with coriander leaves, onion and lemon.
“Tandoori Chicken” is ready to serve.
