After years of grilling chicken and trying different recipes for chcken barbeque, I finally found a recipe using the best chicken marinade I have ever tasted. As you see in the video, it’s called Chiavettas marinade and you’ve probably never heard of it. So this begs the quesiton, if it’s the best, why not?
Well, this product is local to update New York, U.S.A. around the Buffalo, Niagara Falls area of the U.S. Having family and friends from that area, and visiting them many, many times, I came to know and love Chiavettas over the last 6-8 years or so. In that area, it’s sold in local grocery stores. However, outside of the area, you will probably not see it. This is really a shame, since it’s positively the best chicken marinade I’ve ever tasted. Oh yes, did I say it’s the best. It really is!
This marinade was actually developed by a local catering company. During one visit to the area many years ago, I went to a chicken barbeque at a local firehouse, where Chiavettas was doing the catering. Although they were serving other food, it was here I first tasted their delicious chicken and instantly I was hooked. Little did I know at the time that most locals already knew this was the best chicken marinade. For me though, I had to find out by actually tasting it.
After experimenting through the years, I’ve come up with my own version of grilled chicken using this marinade which you’ll find on my website or read on for a few variations.
If you want a great tasting chicken barbeque without using barbeque sauce, then combine Chiavettas with McCormicks’ Grill Mates, Montreal Steak seasoning. Yes, I know it’s Montreal “Steak” seasoning, and yes, I know McCormick makes a Montreal Chicken seasoning as well. However, I’ve tried both and I’m partial to the steak seasoning, even used on chicken. As a matter of fact, I use this seasoning on everything from vegetables, to potatoes, to scrambled eggs to other meats.
Here’s another hint. Use the recipe found on my webpage here http://www.squidoo.com/what-is-the-best-chicken-marinade and use it as is. Or, for an additional variation, try drizzling a little honey over the chicken within about 5 minutes from taking it off the grill. Delicious!
You can also use barbeque sauce if you so desire. However, it’s really not needed. Sometimes though, when I’m in the mood for that actual barbeque taste, I’ll spread just a little sauce over the chicken just before it’s done – and when I said a little, that’s exactly what you should do. The Chiavettas chicken marinade should not be overpowered by barbeque sauce, so use it sparingly.
In closing, I cannot recommended enough Chiavettas marinade. I think it is positively the best chicken marinade you will ever taste. I know you may already have your favorite. If you do that’s fine.
