This Stuffed Chicken Recipe will definitely become a family favorite – You may never want to prepare chicken any other way!
Estimated Prep Time: 25 Minutes
Estimated Cook Time: 40 Minutes
Preheat oven to 350°
? We’ll start by preparing the stuffing for the chicken!
Add 1 and 1/2 blocks of room temperature cream cheese.
Mix in 1 cup of Mozzarella Cheese.
Mix in 1 cup of Smoked Gouda.
Add in 1/2 teaspoon of Salt.
Add in a few shakes/cracks of pepper.
Add about 2 pinches of parsley.
Mix together well.
? While we were preparing this stuffing, we had bacon cooking in the oven. You’ll want to make your bacon as crispy as you can, as you’ll be cutting it up and mixing it into the filling when it’s ready.
? Preparing the Chicken:
You’ll want to get boneless and skinless chicken breasts. I butterflied mine and cleaned off the fat. To create the pocket, I put the fattest side away from me and used scissors to carefully cut a pocket in the chicken.
? Preparing the Breading (3 Bowls)
In the first bowl, add in about 2 cups of flour.
A few shakes/cracks of pepper.
A few dashes of garlic powder.
About a 1/2 teaspoon of salt.
(Mix Well)
In the second bowl, we’ll add 1/2 cup of mayonnaise (this will help the crumbs stick) as well as 5 eggs. We’ll coat the chicken in this mixture prior to the breading.
Lastly in the third bowl, use seasoned breadcrumbs (about 2-3 cups), and add about 3/4 cup of Parmesan cheese.
?? Making the Stuffed Chicken
1. Take a tablespoon (or more) of the stuffing and fill the pocket in the sliced chicken breast.
2. Drudge the stuffed chicken in the flour mix.
3. Flip and Coat the stuffed chicken in the egg/mayo mix.
4. Place coated stuffed chicken in the breading. Press firmly and coat generously.
Using oven safe pans/casserole dishes, use oil (or whatever you prefer to prevent sticking), and place chicken on the well greased surface. Once ready, you can either leave it in the fridge to rest or place it into the oven immediately.
Cook at 350° for 30-45 minutes (I recommend a food thermometer). Once cooking is done, let it rest for at least 5 minutes to prevent juices and filling from coming out.
When all is prepared – SERVE AND ENJOY!
