Peruvian Chicken Recipe:
1 whole chicken with the spine removed
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp dried oregano
8 cloves of garlic
1 sprig of fresh rosemary
8 mint leaves
3 tbsp soy sauce
1 tbsp aji amarillo paste
2 tbsp aji panca paste
1 lime juiced
1 tbsp red wine vinegar
1/4 cup olive oil
Salt on pepper directly on the chicken
Aji Verde Sauce:
1/2 cup mayonnaise
1/4 cup plain yogurt
2 jalapeños seeds removed
5 green onions
3-5 garlic cloves
1/2 cup parmesan cheese or queso fresco
1 lime juiced (about 2 tbsp)
8 mint leaves
2 tbsp aji amarillo paste
3 tbsp avocado oil
1 tsp kosher salt
