Chicken (Or Leftover Turkey) & Cabbage Soup
This started out as a ground beef and cabbage soup ( https://youtu.be/sVUx4qWmrAY )but in the video I subbed in fresh chicken… but this could easily have been made with leftover turkey. So I guess this is now a leftover turkey soup recipe? If you’re looking for leftover turkey ideas; maybe this is it. You could easily use leftover rotisserie chicken in this homemade soup recipe as well.
Ingredients:
500g (1lb) chicken, cut up
1 onion, diced
2 carrots, thinly sliced
2 celery stalks, sliced
60 mL (¼ cup) tomato paste
1 minced clove garlic
1 – 2 bay leaves
10-15 ml (2-3 tsp) Herbes de Provence
Salt and pepper to taste
750 mL (3 cups) chopped cabbage
125 mL (½ cup) uncooked rice
1.5L (6 cups) chicken stock
Method:
In large soup pot, brown chicken over medium-high heat.
Add onion, garlic, carrots and celery; cook, stirring until softened.
Season with salt and pepper.
Stir in tomato paste and cook 1-2 minutes.
Stir in cabbage, rice, bay leaves, stock, and Herbes de Provence .
Bring to boil; reduce heat, cover and simmer until cabbage is tender, and rice is cooked through about 20 minutes.
Discard bay leaves.
Herbes de Provence – When I mix this up at home… it usually isn’t the same twice. This mix has only been regimented and sold commercially since the 1970s, so feel free to mix it up as you wish.
My mix contains equal parts: summer savoury, marjoram, rosemary, and thyme
With very reduced amounts of: anise and sometimes a touch of lavender.
