Tandoori Chicken: enough for 4-5 lbs of chicken
1 cup plain yogurt
1 1/2 tbsp Kashmiri chili powder (sub with a combo of paprika, and cayenne for heat
2 tbsp garlic paste
1 tbsp ginger paste
1 1/2 tsp turmeric
1 tsp garam masala
1 tsp cumin
1 tsp coriander
2 tsp fenugreek seed
2 tbsp oil
Juice of 1 lime
salt to taste right before grilling

2 cups loose-packed mint
1 jalapeño without seeds
2 tsp kosher salt
1/4 cup white wine vin
1 thumb-size piece of ginger rough chopped
2 large or 4 medium shallots rough chopped
1/4 cup white sugar
3/4 cup plain or Greek yogurt
