RECIPE:
2 thinly cut boneless-skinless chicken breasts
Flour
2 eggs lightly beaten
Salt (to taste)
Pepper (to taste)
2 1/2 tablespoons of grated Pecorino Romano cheese
3/4 cup grated mozzarella
1 1/2 teaspoons fresh parsley
2 cups bread crumbs (Progresso Italian Style is the best)
3/4 cup marinara sauce
1 aluminum toaster pan
Bake at 375 degrees Fahrenheit for 15 minutes covered with aluminum foil
Bake uncovered for an additional 5-6 minutes at 375 degrees Fahrenheit
