Vegan Banana Pudding
Ingredients:

Vegan Buttercream
Directions:
1. Layer vegan vanilla wafers, vegan vanilla pudding, and bananas until satisfied.

Vegan Vanilla Wafers Recipe
Ingredients:
1 cup vegan margarine
1/2 white sugar
3 tsp Ener-G egg replacer
4 tbsp warm water
1 tbsp vanilla extract
2 cup all purpose flour
Directions:
1. Cream together vegan margarine and sugar with an electric mixer.
2. In a second bowl, mix together Ener-G egg replacer and warm water.
3. Add Ener-G mixture in with vegan margarine and sugar.
4. Mix in vanilla extract and slowly mix in all purpose flour.
5. Form the dough into a log, wrap in plastic wrap and freeze for two hours
6. Cut the log into ¼ inch disk and place onto cookie sheet.
7. Bake at 350 F for 12- 15 minutes.
Vegan Vanilla Pudding
Ingredients:
1/3 cup white sugar
2 tbsp cornstarch
2 cups almond milk
1 tsp vanilla extract
Directions:
1. Mix together sugar and cornstarch.
2. Slowly add in almond milk
3. Stir over low heat for two to three minutes until thick
4. Serve warm for soft pudding or refrigerate until firm
Vegan Buttercream Frosting
Ingredients:
1/2 margarine
1/2 shortening
3 1/2 powdering sugar
1 tsp vanilla extract
3 tbsp almond milk
Directions:
1. Beat together margarine and shortening until well combined.
2. Slowly mix in powdered sugar until fluffy.
3. Lastly add in vanilla extract and almond milk or soy milk or whichever non dairy milk alternative you decide to use.
