Here is a vegan black bean avocado salad.
Here’s what you’ll need:
1 can of black beans
1 can of corn
1 red pepper, diced
1/2 avocado, diced
a few sprigs of green onion, sliced
Dressing:
1 orange, juiced
1 tsp garlic powder
1 tbsp jalapeno brine
salt & pepper to taste
Roast the corn and peppers until chard, combine with black beans, green onion and avocado.
Combine the dressing ingredients in a cup or bowl, add to the black bean mixture. Enjoy 🙂
