Peanut Butter Pie
Ingredients
1 12oz Tub of Creamy Peanut Butter
1 14oz Can Coconut Cream (chilled overnight)
1 can 12oz of aquafaba (liquid reserve from a can of chickpeas)
1 cup Powdered (Confectioners) Sugar
1 tbs vanilla extract
1 cup Melted vegan chocolate
1 pie crust

Instructions
Poke holes in the bottom of your premade pie crust and bake according to package instructions.
Set in the freezer to chill while preparing pie filling.
Drain the liquid reserve from a can of chickpeas (white beans will work as well)
In a blender add aquafaba and blend until mixture forms small peaks. About 5 minutes.
Scoop the cream off the top of the coconut milk and add it to a large bowl. Then mix in one jar of creamy peanut butter, vanilla extract and powdered sugar and mix until smooth.
Fold in 2 TBSP of the aquafaba.
Add the ¾ of the filling to your prepared pie crust, making sure the pie crust has cooled completely.
Add the rest of the aquafaba to the remaining peanut butter mixture to make a fluffy mousse.
Add to the top of the pie.
Transfer the pie back into the freezer to set for at least an hour.

To make chocolate ganache
Add the remaining coconut cream liquid to a pot set over medium heat.
Add chocolate pieces and mix till completely melted.
Drizzle, Marble or fully coat the pie with topping and enjoy.
