White Qorma
Ingredients for Almond Cashew Nut Paste:
Almonds (peeled) 1/4 cup
Cashew nuts 1/4 cup
Water as required
Ingredients for Chicken Marination:
Chicken 1 kg
Yogurt 1 cup
Lemon juice 2-3 tbsp
Salt 1 tsp
Ingredients for onion paste:
Onion (Sliced) 2 cups
Ginger pods 4-5
Garlic cloves 4
Oil 1/4 cup
Green chilies 2-3
Ingredients for Qorma:
Oil 1/2 cup
Black peppercorns 15-18
Green cardamom 4
Cloves 7-8
Cumin seeds 1 tbsp
Marinated chicken
Garam masala powder 1 tbsp
Onion paste
Almond cashew nut paste 2-3 tbsp
Black pepper powder 1 tsp
White pepper powder 1 tbsp
Salt 1 tsp / to taste
Directions for Almond Cashew Nut Paste Preparation:
1. In a blender add almonds, cashew nuts, and water and blend well into a thick paste. Set aside.
Directions for Chicken Marination:
2. In a bowl add chicken, yogurt, lemon juice, and salt, and marinate the chicken for 15-20 minutes.
Directions for Onion Paste Preparation:
3. In a pan heat oil and add onion, saute for 2 mins. Now add ginger garlic paste and saute for 2-3 minutes.
4. Transfer sautéed onion to a blender, add green chilies, and blend into a thick puree. Your Onion Paste is ready.
Directions for Qorma Preparation:
5. In a pan heat oil and black peppercorns, green cardamom, cloves, cumin seeds, and saute for a minute.
6. Now add onion paste and cook until oil separates. Add chicken and cook over high flame for 15 minutes.
7. Now add black pepper powder, white pepper powder, and salt and cook for 2-3 minutes.
8. Add almond cashew nut paste and cook for 1-2 minutes.
9. Add garam masala powder and mix well. Cover and cook for 15-20 minutes over a low flame or until chicken is done.
10. Take off the lid and serve with naan or roti. Your White Qorma is ready.
