For Marinating Beef:
Beef 1 Kg
salt – as per taste
Kashmiri chilli powder 1.5 tablespoon
Turmeric powder 3/4 teaspoon
Ginger garlic paste 2 tablespoon
Cinnamon sticks 3-4 small
Caraway seeds (shahi jeera) 1/2 teaspoon
Cloves 4 pcs
Green cardamom crushed 4-5pcs
Black pepper corn powder 1 teaspoon
For green paste
Green chillies 6pcs
Coriander leaves 70gm
Mint leaves 70gm
Green papaya 50gm
Deep fried onions 1 cup
Oil 1teablespoon
Garam masala powder 3/4 teaspoon
Yogurt/curd 1.5 cup
lime juice 1/2 teaspoon
For The Rice:
Basmati rice 1kg
water to cook rice
Sea salt to taste (1 teaspoon)
Medium size cinnamon sticks 2
Green cardamoms 3pcs
Cloves 4pcs
Caraway seeds 1/2 teaspoon
Black pepper corns 4-5 pcs
Lime juice 1 teaspoon
To Dum and Seasoning:
a large cooking pot
6 strands of saffron dipped in 1/2 cup milk
Chopped coriander leaves 2 tablespoon
Chopped mint leaves 2 tablespoon
Crushed deep fried onions for garnishing 1/2 cup
Ghee 1tablespoon
Lime juice 1 tablespoon
